Empanadas and Balloon
Tennis!

Empanadas
A dish of Colombia and Spain,
Portugal, the Caribbean, Latin America, and the Philippines

recipe is Panamanian in origin and was passed to Stacie by a
friend at church.

My
friend is a spicy Latina and her husband’s a
laidback American…It’s quite the combo. They’re a
super fun couple and are actually my children’s
godparents.
Note on recipe: My friend found some
empanada shells at the grocery store. If you have a
store with a decent assortment of ethic foods, you
could probably find them. They’re in the freezer
section where you’d buy pre-made burritos. When
she’s in a pinch, she’ll get the pre-made ones.

For dough:
1 ½ cup flour
½ t salt
1 T sugar
4T Crisco or butter
1 egg
3 T cooking wine
|
Mix
all dry ingredients; add butter or Crisco to dry
ingredients. Blend butter with 2 knives (or a pastry
blender). In the center, pour egg & cooking wine &
mix in circular fashion. |

For filling:
1 lb ground beef
½ of a medium onion
Salt & pepper to
taste
|
Brown ground beef with the
chopped onions, drain. Pinch off some dough & roll out with
a rolling pin. Put 1-2 spoonfuls of meat in the center of
rolled out dough. Fold in half & tighten with a fork. Fry
beef patty in medium hot oil until golden brow.

This is wonderful with baked
plantains (get a ripe plantain, cut it in half lengthwise &
put cut side down in a baking dish. Cover with some kind of
fruit nectar…we like guava… and bake at 350 degrees until
tender. Sprinkle some white cheese on top and return to oven
just long enough to melt the cheese). This is a fantastic
(and easy) recipe! |

Balloon Tennis
At this month’s 15th
Annual Reunion Picnic in St. Louis, the real hit was
packing peanuts in kiddie pools. But...in hopes of a
less messy activity, try this one at home: Balloon
Tennis. This potential indoor activity is fun,
creative, and soft on vases and lamps.
Construction:
Tennis Racquets

Paste paper plates onto wooden
paint sticks, like those found at Home Depot/Lowe’s.
Decorate as you like for long-term fun with crayons and
markers; each child can have their own personalized racquet.
Blow up balloons for your
“tennis ball” and watch this activity wear your kids out
over hours of fun. |
